Life has been busy lately. Between working part-time, taking care of three young children, trying to sell our house, and keeping up with day-to-day tasks, I find myself completely exhausted some days. By mid-afternoon I am usually in serious need of a pick-me up. I typically just brew a quick cup of coffee but lately I have been wanting to mix it up a little. I am currently following a dairy free diet due to the fact that I am breastfeeding and my son has a cow’s milk allergy. The poor thing breaks out in terrible eczema any time dairy crosses my lips. Unfortunately, this means no milk or half and half in my coffee. This Coconut Milk Latte is the perfect alternative.
I use the word “latte” loosely. It doesn’t actually contain espresso or steamed milk. But since it is made in the blender it turns out nice and frothy like you would expect from a latte. And it is just as delicious! An immersion blender would also work well for this recipe. This is the one I use.
Not only does it taste amazing but it is actually good for you. The coconut oil and coconut milk provide a good dose of healthy fats. I prefer to use full fat coconut milk as it makes the latte creamier. I use Native Forest brand. The only sweetener in the latte is maple syrup so there is no refined sugar. I’m not a huge fan of overly sweet lattes so I would recommend adding more maple syrup if you prefer yours on the sweeter side. Raw honey would also be a great addition!
Coconut Milk Latte
- 10 oz freshly brewed coffee
- 1/4 cup coconut milk
- 1 tbsp coconut oil
- 1/2 tbsp maple syrup
- 1/4 tsp vanilla
- 1/4 tsp cinnamon
Add all ingredients into your blender. Or place the immersion blender directly into your mug. Blend for 30 seconds until the liquid becomes frothy. Pour into your favorite mug and enjoy!
